Easy vegan raw organic banana ice cream!

Say what? It is getting hot here in Florida and in an effort to be cost efficient and environmentally friendly our abode uses only fans to cool off in the summer heat when things get intense. Without air conditioning it seems that our tastes follow the seasons and in the summer we desire cooler things to eat... like ice cream! Still we like to keep things vegan friendly around here and buying our favorite 
coconut milk ice cream gets expensive. A very simple and delicious alternative that also happens to be raw and requires no additional sugars or sweeteners may be in your kitchen now. Not only is this ice cream delicious, it is also a very healthy alternative to traditional ice creams, even those that are vegan friendly. So, peel back a few bananas, stick them in the freezer to become icy, toss them in a high powered blender and watch in amazement as they become a creamy, fluffy looking ice cream in minutes.  For those of you just skimming over to find a recipe...

  • 6 organic frozen bananas 
  • 1 blender
  • toppings of choice we like...
  • dark chocolate
  • nuts 
  • seeds 
  • fruit
  • maca powder
  • bee pollen
  • coconut manna

To simple to be true? I know it could seem that way but really you have nothing to loose here. Last night we had some friends over for dinner and after a delicious lentil soup, roasted vegetable and qunioa dinner we suprised them with this special treat. This ice cream is fantastic by itself, yet to add to the decadence we created a buffet of toppings. Coconut manna is really just pulverized coconut with the oils still intact that solidifies at colder temperatures which makes a delicious "shell". We also had dark chocolate shavings, raw hazelnuts ground, brazil nuts, maca powder and frozen mulberries.  We used 6 bananas which makes for easy blending, and fed 8 people. All 8 people left saying they would be making this treat for themselves soon. This stuff may even be good enough for a teething baby!
